
Oolong Tea: Tie Guan Yin

Tie Guan Yin, often translated as Iron Goddess of Mercy or Iron Buddha, and sometimes written Ti Kuan Yin or Ti Kwan Yin, is a variety of Chinese oolong tea. It is a roasted tea, and is greener among oolongs, meaning that it is relatively less oxidized and more similar to green teas. It is defined not only by a particular cultivar of the tea plant, but also by its method of processing.Tie Guan Yin originated in Anxi county in Fujian province of China, where it is still produced, although it is now also produced in Taiwan. Anxi is famous for being the origin of a number of other oolongs as well, including the se chung family of oolongs.
There are many varieties of Tie Guan Yin, based on the time of year in which the leaves are harvested, the amount by which it is roasted, and to some degree, the amount of oxidation of the tea. The amount of roasting varies widely, leading to some teas that are very dark in color and have a strong roasted aroma, and ones that are barely roasted at all and are very light in color.
