Green Tea: Mecha

Mecha is a Japanese green tea that is made exclusively of buds. It is considered a highly desirable type of tea, often roughly between sencha and gyokuro in price.

Mecha has a sharply bitter flavor and is quite astringent, and is highly aromatic.

Mecha is often the tea served as "agari", the tea served at the end of a meal of sushi. The bitterness of the tea is seen as cleansing the palate.
