Green Tea: Gyokuro
Last Updated: Mar. 7, 2010
Gyokuro (玉露), meaning jewel dew but sometimes also called jade dew, is an expensive style of Japanese green tea. It has a high amino acid content, giving it a bit of an "umami" flavor uncommon among teas.Gyokuro is usually made from special varieties of tea plant. It is shade-grown for a period of its development, leading the leaves to be rich in chlorophyll.
Gyokuro should be brewed with a much lower temperature of water, and more leaves, as compared to other green teas. Brewing it with higher temperature water can result in the presence of unpleasant qualities in the aroma.
